The truth is I have not really experienced Kale until last week when a student of mine came to anatomy class with a bag of baby kale and was munching on it like a bag of chips. After that class I went out and bought a bag of baby kale and found it irresistible and have proceeded to use it as a base to salads, add it to omelets, rice dishes and just munch on it like I would on a bag of chips, if I ate chips.
So what makes it so special?
Kale has antioxidant nutrients, anti-inflammatory nutrients, anti-cancer nutrients, can help lower cholesterol and even fight H-Pylori Gastritis!
It has high levels of vitamin A, C and B6 as well as magnesium, potassium, iron and fiber.
They say the best way to prepare it is to steam it for 5 minutes.
I am providing a recipe - straight from Chef Bryone himself, with a few minor tweaks.
Kale Slaw - ala Chef Bryone!
Kale - shredded
Carrots - shredded
Red Cabbage - shredded
Almonds - slivered and toasted
Apple Cider Vinegar
Salt and Pepper
Try Kale any way you want, if you don't like it, I won't hold it against you. It's excellent to form your own opinions and not follow the trends!
